Recipe: Low-Carb Peanut Butter Cookie-Cakes

If there is such a thing as a cookie-cake, this would be it!  The size and shape of a cookie but the fluffy consistency of cake, with PB to top it off, YUM! Hope you enjoy! ox Jill

Preheat oven 350 degrees F
Makes 30 cookie-cakes

In large bowl, combine:

1 cup almond flour
1 cup peanut flour (or PB2, dried/powdered peanuts)
1 cup xylitol sweetener
½ cup oat bran (dry)
1 tsp baking soda
½ tsp salt

In a medium bowl, beat together:

1 cup liquid egg whites
1 whole egg
4 tbsp melted butter (unsalted)
½  cup natural peanut butter
¼ cup maltitol syrup (or similar sweetener like honey, coconut syrup or agave)
1 tsp vanilla extract

Pour liquid mixture into dry mixture and mix well
Optional: add ½ cup sugar-free chocolate chips
Scoop 1.5 inch spoonfuls onto baking sheets evenly, leaving room for expansion
Bake at 350 for 15-20 minute or until peaks are browning
Watch out, these bad boys expand in the oven! Makes 30 cookie-cakes! Enjoy!
