Recipe: Nicole’s Homemade Salsa Dip

If you are like most Americans, you are getting ready to watch the Superbowl this weekend and if you are like most fitness gals you are already anticipating the snack situation. My strategy is always to go on offense at social gatherings and dinners and actually BRING my own healthy dish or dessert so that I know if all else fails, I can exclusively eat the one thing I brought lol!

In this post, I am sharing a homemade salsa recipe from our friend Nicole Ducouer, whom I met recently shooting spots for WXII12 Morning News here in North Carolina. Nicole is a local anchorwoman and a total sweetheart, along with her co-anchor Kim Van Scoy. I was lucky to get to hang out with these two one morning for many hours as we made several healthy dishes for short pieces for the local news. Nicole brought this salsa she made and it was delish! So, obvi I though I would share it with you guys, in anticipation of this weekend! The question, then becomes, what do I dip it in?? LOL Well, my personal preference is to eat salsa with a spoon, but you can also use as a salad dressing, over chicken, mixed with ground turkey or bison or over eggs. Get creative with it!

Chop up to your liking:

  • Red pepper
  • Green pepper
  • Red onion
  • Jalapeno
  • Tomato
  • Fresh cilantro
  • Squeeze of fresh lemon (half a lemon)
  • Squeeze of fresh lime (half a lime)
  • Salt and pepper to taste
  • Apple cider vinegar (about 3 TB)

I never measure the ingredients! Just add more of what you like.
IT’S GREAT ON CHICKEN, EGGS, IN WRAPS AND ON SALADS!
Put it the the fridge for a while to let the flavors mix in. There will be liquid on the bottom…i just mix it up and drain some out. Or use it as salad dressing.
