Time for a new, quickie waistline-friendly dessert recipe! I whipped up these bad boys last night at Jade’s parents’ house, when we were all jonesing for a sweet treat. After a thorough perusing of the cupboard, we found enough ingredients to throw together a yummy chocolate treat. Here is my sweet mother-in-law, Joyce enjoying one of our chocolate coconut brownie creations, she loves cocoa! :) The recipe is below!
Low-Carb Chocolate Coconut Brownies
Preheat oven 350 degrees F
Mix all ingredients in a large mixing bowl, and use a spoon to combine until smooth:
1 cup almond flour (or coconut flour)
1 cup shredded coconut
1/2 cup xylitol sweetener
2 scoops chocolate whey protein (use 3 scoops for more cake-like brownies,2 for more chewiness)
1/4 cup unsweetened cocoa powder
1 stick butter, melted
1 whole egg
1/2 cup half & half
Mix everything together until smooth, spread in an 8 x 8 greased pan
Bake for 35-40 minutes, cool and cut (the cooler they are, the more they will hold together–otherwise, you will need a fork to eat!)
