Happy Paddy’s Day & 3 Sneaky Ways to Eat Your Veggies

It’s almost St. Patty’s Day! Instead of indulging in green beer (does anyone really drink that stuff? Lol), how about getting creative with your green veggies? :) I love veggies, and am always looking for creative ways to incorporate them into usually veggie-less recipes.

Here are 3 that I’ve been having fun with recently. If not for the vibrant color (be brave!), you would never know there are veggies in them, can’t even taste them! Great for kids (and adults, such as my significant other!) who put up a fight when it comes to eating veggies.Try them out and let me know what you think!

Post-Workout Veggie Pancakes

This is basically Jill’s post-workout protein pancake recipe with a twist. Here is the revised version:

St. Patty’s Day Flapjacks
2/3 cup liquid egg whites
2/3 cup unsweetened vanilla almond milk
2 scoops whey protein powder (I used Lean Dessert Banana Nut flavor)
2/3 cup dry old-fashioned oat meal
1 packet stevia
large handful of baby spinach
ground cinnamon to taste

Blend/mix until smooth. Spray pan with Pam cooking spray and put on medium heat. Pour ½ batter into pan and cook, flipping pancake when edges are bubbly and semi-firm. Repeat with other ½ of batter. Makes 2 servings.

Erin go Braugh Oat Bran
1 scoop vanilla protein powder (whey, pea, etc.)
2 handfuls spinach
cinnamon to taste
½ cup water*
¼ cup dry oat bran
¼ cup berries (blueberries, blackberries, raspberries)

Blend together oat bran, protein powder, spinach, cinnamon and water until completely smooth blended. Stir in oat bran and berries. Microwave for 6 minutes at 50% power (*I like my oat bran somewhat “firm”, so you may have to play around on timing and water amount for desired consistency).

Shamrock Post-Workout Shake

8 oz unsweetened vanilla almond milk
1 scoop protein powder
½ banana
2 large handfuls spinach and/or kale
Cinnamon/Ice to taste

Blend all together until desired consistency.
