We have a great Thai place just down the street from us, but unfortunately there are not too many healthy options there, considering most everything comes with noodles or white rice, thus it is usually reserved for cheat-meal-occasions only. However, we love the pad see ew dish (chicken, broccoli, noodles) and recently experimented at home using some unconventional ingredients to try to replicate the taste. It came out great and here it is!
Ingredients:
2 chicken breasts, cooked and cubed
2 cups steamed broccoli
1 bag shirataki noodles (http://www.miraclenoodles.com)
3-4 garlic cloves or 1 tsp minced garlic
4 TB Bragg’s Liquid Aminos
1 TB crushed red pepper
1 egg
Directions:
Spray a large frying pan with a zero-calorie cooking spray like PAM, bring to medium heat
Add garlic and sautee for a minute
Add chicken and broccoli (both already cooked), sautee for 1-2 minutes
Rinse and dry 1 bag shirataki noodles, add to pan, mix with chicken & broccoli, stir
Add Braggs Amino Acids and crushed red pepper, stir 2-3 minutes, let cook
Spread the mixture out to the edge of the pan, so that it forms a donut shape with a hole in the middle
Crack the egg in the middle of the pan, and begin mixing the egg into the noodle mixture
Mix using a wooden spoon until completely combined
Remove from heat and serve. Enjoy!!
