Recipe: Cinnamon Apple Muffins

Who doesn’t love cinnamon and apples? I was playing around in my kitchen last weekend, and we had a bag of granny smiths that we hadn’t been eating so I figured I would devise a new recipe. Here it is, hope you enjoy them! ox Jill

Preheat oven 375 degrees F
Spray inside of 12-muffin pan with a zero-cal spray like PAM

Ingredients:

  • 1-1/2 cups almond flour (or pecan meal)
  • 2/3 cup xylitol sweetener
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1-1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 TB butter, melted
  • 2 eggs
  • 2/3 cup sour cream (reduced fat preferable)
  • 2 TB unsweetened apple sauce
  • 1 cup chopped apples (chopped finely, does not need to be peeled)

In a large bowl, combine almond flour, xylitol, cinnamon, baking powder, baking soda and salt. Mix.
In a separate bowl, beat butter, eggs, sour cream and apple sauce
Add liquid mixture to dry mixture and stir until combined
Add apples and stir until even
Spoon batter into pan, makes 12 muffins
Bake for 18-20 minutes or until fork comes out clean
